Date Night
I absolutely LOVE Wednesday nights, because they are date nights. I usually cook dinner for Fordy and then the rest of the night is an adventure. This week I made Chicken Shawarma.
I found the recipe here, but made a few changes. Ford really likes D's fries, so I roasted some potatoes for a healthier choice. This will def be a repeat.
If you are sensitive to spicy food, like me, you can add more yogurt to the sauce recipe or use less Chili Powder.
What you need:
Chicken
2 Tbs fresh lemon juice
1 tsp curry powder
2 tsp extra virgin olive oil
3/4 tsp salt
1/2 tsp ground cumin
2 tbs of minced garlic
2 chicken breasts
Yogurt Sauce
1/2 cup of greek yogurt
1/2 cup of greek yogurt
2 tsp fresh lemon juice
1/4 tsp salt
1 tbs of minced garlic
1 tsp chili powder
Other ingredients
Wheat Tortillas or flat bread
Chopped Romaine Lettuce
Tomatoes
Roasted potatoes
What you do:
1. Roast potatoes in the oven at 350 for 45 minutes. I toss the potatoes with extra virgin olive oil and salt.
2. Prepare the chicken. Mix the first 6 ingredients together in a bowl. Add in chicken and coat evenly with marinade. Set aside.
3. Prepare yogurt sauce.
4. Place the chicken on the grill and cook for about 3 minutes. I used a George Forman
5. Warm tortillas in a skillet
6. When the chicken is cooked, top the tortilla with lettuce, tomatoes, chicken and drizzle with the yogurt sauce and enjoy!
