This weekend was sent in the 254 and was glorious
Friday, the trifecta invited two new peeps, so we had a 5th wheel dinner. The girls; Han, Kira, and myself; made pizza, Italian soda and brownies for Rockwell and Fordy.
Saturday, this happened:
Yes, a true miracle happened in Waco. I also painted a few pieces of furniture, pic to come.
Sunday, Ford and I went to to 1424 and it was divine. I had the best hummus ever! Really, I'm not joking. Hummus usually makes my tongue break out, but not this hummus. The gyros were even better.
Later in the afternoon I took the Brown Bear to the Zoo....too much fun.

One reason why everyone should be friends with the Han
She makes the yummiest lunches ever!!
Han lived across the street from me for a a few days and invited me over for Saturday lunch. When I walked in she had salmon, cilantro rice, and yummy veggies waiting!
This past Sunday Han made Ford and I a delish salad. Coconut chicken with feta cheese, avocado, sauteed veggies , cucumbers, and raspberry dressing .

oops
Sorry for the lack of posts in February! This has been a fast a furious month.
The McBrayers got married the first weekend in Feb, then a sweet Valentine's Day with the boy, which included me being sick.
We celebrated my nephew's first birthday with 2, yes 2, camping themed partes, and the whole family played Kinnect. All in all in was a great month, I have a goal to blog everyday or close to in March.....wish me luck.

Praise is ALWAYS Necessary

Date Night
I absolutely LOVE Wednesday nights, because they are date nights. I usually cook dinner for Fordy and then the rest of the night is an adventure. This week I made Chicken Shawarma.
I found the recipe here, but made a few changes. Ford really likes D's fries, so I roasted some potatoes for a healthier choice. This will def be a repeat.
If you are sensitive to spicy food, like me, you can add more yogurt to the sauce recipe or use less Chili Powder.
What you need:
Chicken
2 Tbs fresh lemon juice
1 tsp curry powder
2 tsp extra virgin olive oil
3/4 tsp salt
1/2 tsp ground cumin
2 tbs of minced garlic
2 chicken breasts
Yogurt Sauce
1/2 cup of greek yogurt
1/2 cup of greek yogurt
2 tsp fresh lemon juice
1/4 tsp salt
1 tbs of minced garlic
1 tsp chili powder
Other ingredients
Wheat Tortillas or flat bread
Chopped Romaine Lettuce
Tomatoes
Roasted potatoes
What you do:
1. Roast potatoes in the oven at 350 for 45 minutes. I toss the potatoes with extra virgin olive oil and salt.
2. Prepare the chicken. Mix the first 6 ingredients together in a bowl. Add in chicken and coat evenly with marinade. Set aside.
3. Prepare yogurt sauce.
4. Place the chicken on the grill and cook for about 3 minutes. I used a George Forman
5. Warm tortillas in a skillet
6. When the chicken is cooked, top the tortilla with lettuce, tomatoes, chicken and drizzle with the yogurt sauce and enjoy!

What are you doing New Years Eve?
I hope each of you have a wonderful new Years. I'm not sure if I'll be back on before then. I'm checking out for a night at the lake, dinner with friends, and a party at the duplex. :) Best part: I get to be with Fordy and the besties.
2011, you have been great! 2012, I think you will be better!
